Thai Turkey Meatballs

Ingredients
  

For Meatballs
  • 1 lb Ground Turkey
  • ½ cups Zucchini About ½ of one zucchini
  • 1 tbsp Green onion chopped
  • 1 tsp Basil Chopped
  • 1 tsp Cilantro
  • 1 tsp Garlic Chopped
  • 1 tsp Ginger Chopped
  • 1 tsp Fish Sauce
  • 1 tsp Red Curry Paste
  • 1 tbsp Coconut Milk
  • 1 tbsp Sesame oil
For Sauce
  • cups Coconut Milk
  • 2 tbsp Tomato Paste
  • 2 tsp Red Curry Paste
  • 1 tsp Fish Sauce

Method
 

  1. Shred zucchini and soak out excess moisture with paper towel or cheese cloth
  2. Throw all meatball ingredients into large bowl and mix well together
  3. Set a large heavy bottomed pan on stove and preheat over medium heat
  4. Add oil and place meatballs in pan
  5. Allow meatballs to brown on one side, before flipping to other side
  6. Mix sauce ingredients together
  7. Once second side is browned, pour sauce into pan
  8. Bring to boil, reduce to simmer and allow to cook for 10 minutes. Sauce should thicken to nice consistency
  9. Garnish with chopped basil and/or cilantro
  10. Serve over mashed potatos, sticky rice, or whatever else you want, and enjoy!
